Buttermilk Biscuits

These light, flaky biscuits are delicious and quick to mix up. Handle the dough gently and use chilled butter for best results.

Ingredients

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/4 cup cold butter
3/4 cup buttermilk

Directions

Preheat oven to 450°F (232°C). In a medium bowl, stir together flour, baking powder, baking soda and salt. Using a pastry blender or 2 knives, cut the butter into the flour mixture until it resembles a coarse meal.

Make a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork, just until a soft dough is formed and ingredients are incorporated. Add 1-2 Tablespoons additional buttermilk if the mixture is too dry.

Form the dough into a ball and knead 12-15 times. Roll or pat out dough to 1/2 inch thick and cut with a floured biscuit cutter, cookie cutter or glass rim. Bake on an ungreased cookie sheet 12-14 minutes, until golden brown.
