Most people see the mountains as a vacation. For me, they’ve always been home. I grew up in the thin air, the short growing seasons, and the rugged beauty of Highlands Ranch, Colorado at an elevation of 5,920 Feet (1,804 METERS) above sea level.
But even with a lifetime of high altitude living under my belt, I spent years fighting a frustrating battle in my own kitchen.
You know the feeling: You find a "perfect" recipe online or in a best-selling cookbook. You follow every instruction to the letter. But when you pull it out of the oven at 6,000+ feet, it’s a disaster. It’s sunken, it’s dry, or it’s golden-brown on the outside but raw enough to eat with a spoon on the inside.
